I don’t know about you, but my summer has been busy and full of tasty food and drinks. This might be expanding my waistline a bit…so it’s time to lighten up my meals!
With the awesome bounty from farmer’s markets this time of year, it shouldn’t be hard to find some tasty veggies for salads. Have you checked out the new Kentwood Farmer’s Market on Saturday morning yet? It’s right in the KDL parking lot!
One of my go-to kitchen gadgets is my salad spinner. I use it for veggies and fruits at least twice a day. Storing fresh produce the correct way is essential! No one wants wilted lettuce or dirty berries. Did you know you can pick up many kitchen essentials right at GB Russo’s? Be sure to check out the housewares section during your next visit.
My tip for storing produce? Towel is your friend! After you clean your lettuce, wrap it in paper towel, store in a bag. To wash your fruit, I have a vinegar trick that will make them last DAYS longer: rinse in water and vinegar to clean off the mold spores and then store in the fridge.
Now let’s make a tasty salad with that fresh lettuce! This is a tuna salad remix that you’ll be drooling over in no time. I snagged some of the Maple Grove Farms Asiago & Garlic dressing from GB Russo’s. This brand is my favorite—they are all super flavorful and tasty. If you’re looking for a bit more of a filling meal, just throw this salad in a wrap!
- 1 can tuna in Extra Virgin Olive Oil
- 4 cups lettuce—combination romaine and kale blend
- 3 hard-boiled eggs
- ½ cup sliced cucumber
- ½ cup shredded carrots
- ¼ cup chopped celery
- Maple Grove Farms Asiago & Garlic Dressing
- Toss the lettuce with dressing.
- Top the salad with remaining ingredients!
- If not eating for a while, save the dressing for the side
